Cleaning versus Beer Drinking



I've had a busy morning.  I’ve already gone to the grocery store, did billing and gathered supplies for my camps, changed the sheets and cleaned the bird cages.  I decided to take a break and have some lunch.  I’m embracing my new healthy lifestyle…which means that I’m still not drinking diet cokes.  I’m on about six weeks of no diet cokes.  So, in keeping true to my new healthy ways, I had a Totinos pizza and beer for lunch.  Taking my lunch break made me think that I really didn’t want to clean today because I have more beer and a couple of things left to do in Skyrim.  An important part of housewifery is the art of the illusion.  If you don’t feel like cleaning, it is imperative that you redirect your spouse’s attention to a delicious meal.  Done right, this can completely mask the filth that you failed to clean that day.  Here’s a recipe for a super easy breakfast sandwich.  Delicious doesn’t have to mean time consuming.  After all, there is beer to be consumed.

Bacon, Egg, Sharp Cheddar Bagel Sandwich


Ingredients
Bagel thin, toasted
1 egg, cooked over hard
Sharp cheddar cheese, shredded
Two slices of bacon, cooked
Mayonnaise

Preparation
Cook the bacon in a skillet over medium heat. Once it is crisp, remove from the pan and place on a paper towel to drain.

Heat the skillet over medium heat then crack an egg into the pan. Poke the yolk to break up then season the egg with sea salt and freshly cracked pepper, to taste. Once the white has set, flip the egg with a spatula, add the cheese to the top of the egg, and cook for 30 seconds.

Toast the bagel and spread with mayonnaise. Add the egg to a bagel half, top with bacon, then add the remaining bagel half. Serve immediately. Enjoy.

Never Blog Drunk

I do my best to save my drinking for important things like housecleaning, cooking and visits with family.  I do what I can to stay away from things like Facebook, Twitter or this blog when I've had a bit too much to drink (I save drunk time for tumblr, save no time for MySpace and avoid Pinterest so as not to make outright fun of some of the ridiculous shit impressive crafts on there).  But I have to admit, I'm a sucker for other people's drunken rants.  It's just fun to watch it all go down and implode right there for you to read. I especially like it when douchebags and morons have a go at status update, blog posts, etc.  Oh sure, you can remove this stuff, but the internets is a fast moving train and normally the really good stuff has been passed all around way before the hungover bastard stumbles to the computer to uncover the drunken carnage left behind in their wake and attempt a delete.  One such instance is this gem Dangerous Minds posted today.  Check it out:



In other news, the Thunder won on Tuesday!!  So it's back to the bar for me to watch the next game.  I wish the bar had a pool so I could watch the game like the guy in this picture.  Oh well,  I'll make do without the pool and I promise not to drunk blog rant after the game.  Thunder Up!

Quichiladas - Breakfast Enchiladas

Ingredients
2 cups ham, cubed
1/4 cup chopped geen onions
1/4 cup sliced mushrooms
1/4 cup diced green pepper
2 1/2 cups shredded cheddar cheese, divided
10 flour tortillas
2 cups half and half
6 eggs
1 Tbsp flour

Preparation
Assemble this casserole the night before and bake it in the morning.

Spray a 9x13-inch pan with cooking spray. Set aside. Mix together ham, green onions, mushrooms, green pepper and 2 cups of cheese. Divide meat and cheese mixture between tortillas. Roll up each tortilla and place seam side down in baking dish.

Whisk together half and half, eggs and flour. Pour over tortillas. Cover and let sit overnight.

When ready to bake, preheat oven to 350. Bake for 30-40 minutes. Remove and sprinkle remaining 1/2 cup of cheese over enchiladas. Bake for 5-10 more minutes, until cheese is melted.

Thunder Up




I can’t really write anything about “True” History today because the NBA Finals are tonight.  I’m a Thunder fan.  I can’t believe my home state actually has an NBA team much less such a kick ass team.  It was like a really big thing in the 1980s when we got a mall with a movie theater.  This is big time stuff.  Naturally, I am wearing my Thunder gear and will be watching the game with friends in a bar.  I’m hoping to pretty much convert the entire bar to cheer for the Thunder.  I’ll do this with a mix of charisma and obnoxiousness.  Perhaps I’ll buy each patron one hot wing to win them over to my side.  I’m pretty sure I’ll be drinking beer, but I’m also going to order a Blue Hawaiian with an orange slice just to have my team colors in a drink in front of me.  The likelihood of me not drinking this drink and then not ordering another one are slim, but I will do my part to keep this appropriately colored drink in front of me at all times this evening.


Blue Hawaiian or Thunder Thirst Quencher

Ingredients
¼ cup cream of coconut
5 tbs pineapple juice
2 tbs Blue Curacao
1/6 cup light rum
Orange slice to garnish

Preparation
Blend light rum, blue curacao, pineapple juice, and cream of coconut with one cup ice in an electric blender at high speed.  Pour contents into a serving glass.  Decorate with slice of orange and serve chilled.

First Day of Rain Camp



I started teaching camp today.  I actually had the last two weeks off from teaching.  1998 was the last time I did not teach a summer camp during the first week of June.  It was fantastic to be kid free for a few weeks, but I do miss the little boogers.  I’m not sure why, but little kids always want to hold my hand.  I’ve even had to break up fights over this issue.  The thing about it is, of course, it is sweet, but I really can’t stand their little grubby, sweaty hands touching my hands.  I probably wash my hands 87 times a day when I’m around kids.  I don’t want to see a kid picking their ass crack and then fighting over holding my hand.  It’s just gross.  Additionally, today was raining.  Not a big deal because we did some stuff inside and were able to go outside later.  The problem with the rain was when the sun came out the humidity smacked you in the face.  I think it was probably 396% humidity.  Sweet Baby Jesus…it was hot!  My hair looks like a $2.00 straw wig found at a rundown thrift store. When I got home, I let the dogs out because it was still sunny.  As I was drinking my strawberry banana smoothie and trying to relax, the weather suddenly changed and another rain storm started.  This caused frantic scratching at the door as the dog’s survival instincts kicked in and panic ensued.  You would have thought hundreds of people were firing bullets in the air and it was actually raining bullets.  I just let them all back in and the drama over the rain continues.  I’m getting the stink eye from all the dogs in between frantic rolling sessions all over the furniture.  I’m fairly certain the rest of my day will include another hand-washing, booze and a nap.

Hunger Pains and Easy Fish Tacos


I was just feeling really weird.  I figured I was coming down with something and then I realized the sensation I was feeling was hunger.  I’m never hungry because I’m never not eating.  I sometimes actually eat in preparation for a meal.  It is really astounding that not only did I forget to eat, but hungry pains were such a rarity that I mistook them for strep throat or something.  This entire incident has put me in the mindset of spending the rest of the day on the couch, eating and watching Driving Miss Daisy over and over again.  In between, though I might crank up some Cinderella, clean the kitchen and contemplate the meaning of life.  I’ll clean the kitchen because that is the place where the food lives and things should be tidy for the food.   Here’s some Cinderella for you, too.  I also included the recipe for some fish tacos I made the other night.





Easy Fish Tacos

Ingredients
1 garlic clove, minced
Sea salt
¼ cup finely chopped parsley
2 teaspoons or so of Emeril’s Southwest Essence
2 limes, cut in wedges
1 teaspoon extra virgin olive oil
4 haddock loins
Package of cole slaw mix
White corn tortillas
Shredded Mexican-blend cheese


Preparation
Mash garlic and salt into a fine paste (I used mortar and pestle, but you can also just use your cutting board).  Stir in parsley, Emeril’s Southwest Essence, lime juice and olive oil.  Cut two slashes in each fish fillet.  Rub  half your mixture all over the fish (that sounds dirty).

Heat your grill to medium-high heat.  Place fish on the grill about 4 minutes per side, flip only once.  If there is skin on your fish remove the skin once the fish is done. In a bowl, flake the fish into large pieces and rub in the remaining spice mixture adding an additional few squeezes of lime juice.

Toast tortillas on the grill to soften.  Add fish, cole slaw and cheese to tortilla.  Serve with a lime wedge.
