Crock Pot Breakfast Casserole - WTF and WOW Recipe Wednesday

Crock Pot Breakfast Casserole (Crock PotGirl)

1 pound ham, bacon or sausage; cooked, degreased and crumbled/diced
1 small onion, diced
1 small green or red pepper, diced
16 oz. hash browns, frozen
¾ cup co-jack or cheddar cheese, shredded
6 eggs
1/2 cup 2% milk
½ cup scallions
Salt and Pepper to taste

Grease or use a crock pot liner.  Layer ingredients starting with frozen hash browns followed by meat, onions, peppers, and cheese.  Repeat layer twice and top with scallions.  Beat the eggs, milk, salt and pepper together.  Pour over the layered ingredients in the crock pot (ensure everything gets moistened well).  Cover.  Cook on low for 7 to 8 hours.  Wake up and eat!
