This isn’t really a
WTF, but it is one of my new favorite tumblr sites. Texts from Dog
Mini Steak and Bean
Taco Cups
3-4 flour tortillas,
cut into small biscuit-sized rounds
Refried beans (I used black beans…I have an OCD texture
issue with refried beans
Leftover cooked steak,
diced
Cheddar cheese,
shredded
Sliced black olives
Sour cream
Green Onions
Preparation
Preheat the oven to
425 degrees. Coat a muffin tin with
cooking spray. Using a biscuit cutter or
round cookie cutter, cut circles out of the tortillas while they are cold. Once you have all the circles cut out, wrap
them in a paper towel and microwave them for 30 seconds until they are
pliable. Press each tortilla circle into
the muffin tray cups. Spoon a little bit
of the beans into each cup followed by the diced steak, shredded cheese and
olive slices.
Place into the oven
and bake for 20 minutes. Remove from the
oven and top each taco cup with a dollop of sour cream and green onions (you
can also add a little salsa). Serve
immediately. Enjoy!
